Baked Chocolate Oatmeal
Chocolate cake for breakfast? Yes please. Made with oats and bananas? Even better. We often make a double batch for our crew.

2 bananas, mashed
¼ cup cashew butter
1 ¼ cup unsweetened almond milk
¼ cup pure maple syrup
2 tsp vanilla extract
2 cups rolled oats
¼ cup unsweetened cocoa powder
2 tsp baking powder
¼ tsp salt
¼ cup chocolate chips (scatter on top after you pour batter into baking dish)
Preheat the oven to 400 degrees. Add the bananas to a bowl and mash with the back of a fork. Stir in the cashew butter, almond milk, maple syrup, and vanilla extract.
Then add in the dry ingredients – oats, cocoa powder, baking powder, and salt. Combine.
Transfer the oatmeal mixture to a baking dish (you can even line parchment paper in your baking dish so the cleanup is minimal). Scatter the chocolate chips over the top.
Bake for 25 minutes and enjoy!
